Before You Cook
Chop the onions as fine as you like
Chop the red bell peppers into roughly quarter inch pieces
Chop the Chili in Adobo as fine as you can get it
Ingredients

| 2 | Red Bell Pepper |
| 1 | Chili in Adobo Sauce |
| 1 lb | Ground Beef 80/20 |
| 1 can | Green Chilies |
| 1 can | Pinto Beans (15oz) |
| 1 can | Black Beans (15oz) |
| 1 can | Tomato Sauce (15 oz) |
| 2 can | Diced Tomatoes (15 oz) |
| 4 clove | Garlic |
| 1 cup | Water |
| Spice Mix | |
| 1 tbsp | Chili Powder |
| 2 tsp | Ground Cumin |
| 0.5 tsp | Dried Oregano |
| 0.5 tsp | Salt |
| 0.25 tsp | Ground Black Pepper |
Instructions
- Warm a large pot or dutch oven to medium heat. Add avocado oil. When it is shiny in texture (shimmering) and chopped onions. Stir occasionally until the onions are softened or starting to brown
- Add beef and brown it with the onions
- Put in the Red Bell Peppers, Green Chilis, Garlic and the Spice Mix. Stir until well combined. And let sit for 5 minutes.
- Add Pinto Beans, Black Beans, Diced Tomatoes, Tomato Sauce, Water. Bring to a simmer and then reduce heat to low and let sit for 20 minutes.
